Stuffed Spaghetti Squash

Ingredients:
1 whole spaghetti squash
1/2 yellow onion, chopped
1 lb. ground turkey
1 15oz. can unsalted corn, drained and rinsed
1 15oz. can black beans, drained and rinsed
1 orange bell pepper, chopped
1 green bell pepper, chopped
1 tomato, chopped
1/2 cup sharp white cheddar cheese
Directions:
Preheat oven to 400 degrees
Slice spaghetti squash in half lengthwise and discard the seeds
Using a baking sheet, place both halves next to each other on the baking sheet, rub both sides with olive oil and then flip spaghetti squash so the open side is laying flat on the baking sheet. Bake for 45 minutes or until soft
While spaghetti squash is baking, add chopped onion and olive oil to a medium saucepan, cook for about 2 minutes or until onion becomes softened. Add the ground turkey and cook until fully cooked through
Once chopped turkey is done, add in the peppers and tomatoes and cook for another 5-8 minutes or until peppers are softened
Add in the corn and black beans, mix well
Remove spaghetti squash from the oven, loosen the inside by scraping a fork through it
Fill the spaghetti squash with the ground turkey, peppers, beans and corn, top with cheese and any other toppings & enjoy!
