Mediterranean Dip

Ingredients:
8 oz. hummus (I used roasted red pepper)
1 tomato, diced
1 whole cucumber, diced
1/2 cup nonfat greek yogurt
1 can artichoke hearts, chopped
1 can roasted red peppers, chopped
1/4 cup feta cheese, crumbled
2 tbsp fresh parsley, roughly chopped
1 tsp paprika
salt & pepper
Directions:
In a small - medium size serving dish, spread the hummus as the first layer on the bottom of the dish
In a small bowl, mix together the tomatoes and cucumbers, then layer on top of the hummus
Using a spoon, evenly spread the yogurt over the tomatoes and cucumbers, Sprinkle the paprika and salt & pepper over the yogurt
Next, add the artichoke hearts, roasted red peppers and the feta cheese
Top with fresh parsley
