Cauliflower Nachos


Ingredients:

  • 1 head of cauliflower, rinsed and cut into 1/2 inch slices

  • 1/2 cup cheddar cheese

  • 1/4 cup grape tomatoes, chopped

  • 1/4 cup red onion, chopped

  • 1/3 cup refried beans

  • 1/4 cup hot sauce

  • 2 tbsp olive oil

  • 1 jalapeno, sliced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp chili powder

Directions:

  1. Preheat oven to 425 degrees. Using a large baking sheet, rub with oil and set aside

  2. In a small bowl, combine all seasonings

  3. In a larger bowl, add cauliflower slices and toss with seasoning

  4. Even layer the cauliflower slices on the baking sheet and bake for about 20 minutes, or until cauliflower is tender.

  5. Remove the pan from the oven. Add the refried beans, cheddar cheese, jalapeno slices, tomatoes and onions to the top of the cauliflower and return to the oven for another 10 minutes, or until cheese is fully melted

  6. Remove from oven and add avocado, sour cream and any other toppings before serving
