Breakfast Tostados


Ingredients:

  • 2 tortillas

  • 4 eggs

  • 1 egg white

  • 1 cup vegetarian refried beans

  • 1/2 cup shredded cheddar cheese

  • 2 tbsp medium salsa

  • 2 tbsp hot sauce

  • 1 cup of pico de gallo

Pico de Gallo Recipe:

  • 1 cup tomatoes, chopped

  • 1/2 cup red onion, chopped

  • 2 tbsp fresh parsley, roughly chopped

  • 1/4 cup scallions, sliced

  • 1 tsp cayenne pepper

  • 1 tsp chili powder

  • salt & pepper⁣

Directions:

  1. Preheat oven to 400 degrees

  2. In a small bowl, make the pico de gallo and set aside

  3. On a baking sheet, lay out the tortillas and spread the refried beans in an even layer on each tortilla. Place in the oven for 5 minutes, or until beans are hot and tortilla is a little crispy

  4. In the meantime, cook eggs per preference, I chose to do one scrambled and one sunny side up

  5. Remove tortillas from the oven, layer with eggs, cheese, salsa and pico de gallo. Return the oven for just another minute or so, until the cheese has melted. Top with any additional toppings & serve!
