Avocado & Egg Tostada

Ingredients:
4 eggs
2 tostadas
1 1/2 avocados, mashed
1 cup grape tomatoes, chopped
1/4 cup yellow onion, chopped
2 tbsp fresh parsley, chopped
1 tsp garlic powder
1 tsp dried oregano
1 tsp crushed red pepper flakes
salt & pepper
Directions:
Preheat oven to 400 degrees.
Lay tostadas on a baking sheet, side by side and place in oven for about 5 minutes or until slightly crispy
In a medium size skillet cook eggs per preference (I chose to do all sunny side up)
While eggs are cooking, using a small bowl, mix together the tomato, yellow onion, garlic powder, red pepper flakes, oregano, parsley, salt & pepper, set aside
Using another small bowl, mash the avocados and sprinkle with salt & pepper
Once tostadas are done, remove from oven. Spread the avocado evenly on each tostada, top with the eggs and salsa
